As the morning sun glimmers behind the rain-swollen clouds, the women folk in Dahanu come out into the aangans (courtyards) of their homes to pluck fresh lemongrass for their morning chai.
It's a tradition that has prevailed in the districts of Maharashtra for generations. Lemongrass chai has a tangy sweetness and is much sought after for its health-promoting properties.
Directions (6oz, 180ml)
Add two parts water (4oz, 120ml) to one part milk (2oz, 60ml) and bring to a boil. Then add 1 tsp of tea and 1 tbsp sugar. Stir and simmer for 2 to 3 minutes, till coppery brown. Strain.
